Lamb is tender and delicious, and here it leads rather than supports: a lamb-forward plate is a feast for a cat used to chicken or beef. It also makes a natural rotation partner for those meals, a real change of taste with a different mix of minerals. The organs are chicken, because chicken hearts and liver are easy to find fresh all year while lamb organs rarely are.
